3/4 cup organic whole wheat pastry flour
1/4 cup corn flour (made in vitamix from Bob's Red Mill organic medium ground cornmeal)
1/4 cup organic white sugar (purchased at Costco - Kirkland brand)
1/4 cup raisins (sun maid organic)
1 package instant oats (Nature's Gate Apple)
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon hempseed
1 cup unsweetened Natura Soymilk
1/2 fresh lemon juice
1 mashed banana
Preheat oven to 375. Measure all the dry ingredients into a bowl. Mix together very well. Stir lemon juice into the soymilk. Mash banana and stir through lemon juice/milk mixture. Pour liquid into the dry - mix using spoon or spatula - don't overmix. Use as many folding strokes as possible. Line muffin tins with parchment muffin liners (If You Care large are great). Approximately 1/4 cup batter plus about 1 tablespoon per muffin. You can sprinkle tops with a bit of white sugar - makes a nice crusty top. This recipe makes 8 large muffins (they don't rise high top but have a nice texture and are baked through). They would probably rise higher using regular size muffin tins. You can easily omit the raisins and use any other instant oats you like (though these one are bigger than average - 40 gm per package. If you prefer less sweet you could use 2 tbsp. sugar but add 2 tbsp. of another dry ingredient to make up for it (extra flour or oats). Bake for about 18-20 minutes.
